In a large bowl, add the flour, yeast, cold water, olive oil, salt, mix with a spoon, cover with a clean towel and let the dough rest for half an hour. Repeat the process two more times and transfer to the refrigerator for 24 hours. The next day, take the dough out onto the counter, cover it with a towel and leave for half an hour. Flour the countertop and use your fingers to roll it out into an oval shape. Transfer the dough onto a parchment paper, drizzle with olive oil, and bake in a preheated oven at 270°C (on conventional heating) for about 10 minutes or until the dough rises. Remove from the oven, add Condito’s Pizza Sauce, mozzarella, mushrooms and bake for 5 more minutes. When ready, sprinkle with grated parmesan, thyme and serve.

Ingredients

For the dough
1 jar of Pizza Sauce by Condito
250 gr all-purpose flour
20 gr rice flour
20 gr soy flour
4 gr dry yeast
200 gr cold water
2 tbsp olive oil and a little more for rolling out the dough
1/2 tsp salt

For baking
150 gr mozzarella, grated
4-5 mushrooms, thinly sliced

For serving
50 parmesan cheese, grated (or some other yellow cheese)
Fresh thyme
