Wash the mushrooms thoroughly and place them in a food processor. Blend until finely chopped.
Cut the tenderloin in half. Add a little olive oil to a wide frying pan over high heat and coat the tenderloin on all sides setting aside to rest.
Sauté the onion and garlic in olive oil. Add the mushrooms, salt and pepper and sauté until dry.
Roll out the puff pastry sheet and cut it in half. Spread the mustard all over the surface. Add a layer of mushrooms and optionally a layer of grated mozzarella cheese. Add the meat and roll up into a roll. Brush the puff pastry with egg yolk and bake in a well preheated oven at 180°C until it turns a nice golden colour.
