Place the pork shank in a casserole dish. Prepare the marinade by mixing all the ingredients and pouring it over the meat. Then add the water and rosemary.
Cover the casserole dish with its lid and bake at 190°C for 1 1/2 hours. When the cooking time is up, remove from the oven and add the baby potatoes, sliced in half. Add extra salt, pepper and a little water to the potatoes. Return the dish to the oven and cook for approximately one extra hour. Finally, remove the lid and bake until the pork is cooked through.

For the pork shank:
1.5 kg pork shank
1 package of baby potatoes
250 ml water
1 tsp rosemary
For the marinade:
4 tbsp Classic Condito Mild Mustard
2 tbsp honey
1/2 tsp garlic powder
1 tsp salt
1 tsp pepper
20 ml olive oil
juice of 1 orange
juice of 2 lemons
