Add the mayonnaise, avocado, lemon, rocket, olive oil, salt and pepper in a food processor and blend to a cream. Add lemon, salt or pepper to taste. Toast the bread. Spread the avocado cream, cucumber, carrot, and radishes on top of the bread slices. Add an egg, top with salad leaves and serve.

2 tbsp Condito Light Mayonnaise

1 ripe avocado, peeled and diced

1/2 lemon, juice only

50 g rocket

1 tbsp olive oil

Salt

Pepper

4 eggs, boiled

Cucumber and carrot in strips

Radishes

Green salad leaves
