Peel and cut the onion into thin slices. Place in a bowl and cover with red wine vinegar. Leave for ten minutes or store in a jar until it’s ready to serve. Boil the eggs for 7 minutes (or longer depending on your preference). Submerge them in cold water until cool and peel them. Boil the potatoes in plenty of salted water for 20 minutes or until tender. Boil the green beans in salted water for 20 minutes or until tender. Allow the potatoes and green beans to cool. In a bowl, combine the spring onions, cucumbers, add the potatoes, green beans, onions (prepared with vinegar), pepper, fresh herbs, radishes, Condito’s Mustard & Mayo Sauce, mix well and serve.
