Prepare the vegetables in an oven dish. Add the eggplant, bell pepper, olive oil, onion, garlic, salt and pepper, mix and bake in a preheated oven for about 25 minutes or until the vegetables are done. In the meantime, boil the pasta in plenty of salted water according to the package instructions. When ready, strain the pasta, add it to the oven dish with Condito’s Basilico sauce, parmesan, herbs, stir, bake for 5 more minutes and serve.


1 jar of Basilico sauce by Condito

1 large bell pepper, diced

2 tbsp olive oil

1 onion, diced

2 garlic cloves



1 package of rigatoni pasta

100 gr parmesan cheese, grated

Fresh herbs for serving
