For the gyros

Put in a large bowl all the ingredients for the marinade and mix them. Then add the tenderloin and mix them well all together. Cover it with cling film and leave it in the fridge for at least 30 minutes. You can leave it also in the fridge overnight. Put a non-stick pan to burn over medium to high heat and sauté the marinated tenderloin until it turns brown on all sides.

For setting up

Bake the pies in the oven or toast them until they are lightly brown, for around 4-5 minutes. In a bowl, mix the onion slices with the gyros. Put 1 tablespoon of Condito Mustard & Mayo Sauce in each pie and then add the gyros with the onions, the potatoes and the tomato. Wrap them and serve.

500g of tenderloin cut into long narrow strips

50g Condito Mustard & Mayo Sauce

1 tbsp. extra virgin olive oil

2 tbsp. white vinegar

1 tbsp. oregano

1 tsp. dried or fresh thyme

1 tsp. sweet paprika

1 tsp. smoked paprika

1 tsp. chilli flakes

1/2 tsp. cumin

1 tbsp. honey

1 clove garlic




For the wrappers

8 pies

100g Condito Mustard & Mayo Sauce

1 onion in thin slices

1 small bunch of parsley

2 sliced tomatoes
